Does anyone who still calls in here have any knowledge or experience of using a Pressure canner?

If so I have a few questions you may be able to help me with thumbleft

Have you already got one or are you thinking of getting one? If the latter, you might want to consider water-bath canning instead - a lot cheaper and usually pretty much as easy. And do you really mean just canning or are you thinking of bottling (as in jars.. Wink)?

I do a lot of electric pressure cooking but can/bottle (using a big stove-top pressure cooker) rarely; the p-i-l do it all as they're looking after our village garden while living in the house... Smile

We have been using the water bath-canning method for several years now and although we will continue using this method for certain things we now have a Pressure Canner that we have just started experimenting with.

As you probably know, you pack your stuff into mason jars with a two part lid, put into the canner, build the pressure, leave for the set amount of time and if you are lucky you will not poison yourself when you eat the end results! Laughing

We are aware that most Bulgarians generally water-bath everything including their meats and have watched and tasted some of our neighbours output using this method but feel a bit more comfortable using a pressure canner.

The term canning totally baffled me at first as I did not realize it referred to preserving things in glass jars, how our American friends came to use this term I could not even guess but no doubt some-one wiser than me could reveal the answer.

It just provides us with another option of preserving what we produce, three freezers full of meat, fruit and veg needs condensing down.

It's because the original process was for packaging food in airtight canisters of various types... Wink

What is often referred to as a "can" is more correctly called a tin can, ie tinned canister.
